I enjoy making homemade meals for my dinner, so I wanted to give you a few options for simple, quick meals for your weeknights. This version of a vegetarian taco salad can be made in half an hour and it's delicious too!
Vegetarian Taco Salad
2 Tbs oil
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 zucchini or summer squash, chopped
1 or 2 jalapenos, chopped (depending on your heat preference!)
1 tsp cumin
1 Tb chili powder
1/2 tsp hot sauce
1 can (14 oz) diced tomatoes with green chilies, undrained
1 can (30 oz) pinto beans, drained
1 cup shredded cheddar cheese
1 bag (10 oz) of butter lettuce
Crushed tortilla chips
1 cup shredded pepperjack cheese
Salsa and sour cream
Saute onions and garlic until crisp tender, 4 - 5 minutes. Add red pepper, zucchini and jalapenos; cook 2 minutes more. Add spices, tomatoes and pinto beans. Simmer 10 minutes and stir occasionally. Remove from heat, sprinkle with cheddar and set aside.
Divide lettuce and crushed tortilla chips among plates and top with veggie mixture. Sprinkle with pepperjack, garnish with salsa and sour cream. Serve and enjoy!
